Vegan-Friendly Snack. Perfect for entertaining!

² Ingredients

  •  1/8 tsp Garlic Powder
  •  1 dash Salt
  •  2 serving (serving = 1/2 cup) Trader Joe's Cannellini White Beans
  •  2 cup Baby Spinach
  •  4 serving (serving = 3 peppers) Prime Time Sweet Mini Peppers
   

q Directions

In a small saucepan, boil 1 (15oz. can) of white beans with 1/2 Cup of water and a dash of salt.

When beans are fairly soft, drain from water (set water aside)

Blend Beans with 2 handfuls of Baby Spinach and 1/8 teaspoon Garlic Powder. If bean mix is too thick, add some of the cooking water to thin out, aiming for desired consistency.

Spoon bean mix into halved (and seeded) mini peppers.
Garnish with Black Pepper & Dried Parsley.

**ChefTiffy Tip**
For softer peppers, steam for 1 minute after cutting, then stuff.
