² Ingredients

  •  1 tablespoon Cocoa Powder
  •  1 medium Egg
  •  1/2 cup, chopped Walnuts
  •  1 tablespoon Almond Butter
  •  1/2 cup, pitted, chopped Date
  •  1/2 cup, sauce Applesauce Unsweetened
  •  1 tablespoon Coconut Oil
  •  1 tsp Vanilla Extract
  •  1 avocado, NS as to Florida or California Avocados
  •  1 tsp Baking Soda
  •  1/2 tsp Sea Salt
  •  1 serving (serving = 1/2 cup) Farmer's Market Organic Sweet Potato Puree
  •  1 serving (serving = 1/4 cup) Bob's Red Mill Spelt Flour
  •  1 serving (serving = 1 scoop) Nu-tek Pro5 Vanilla Protein Powder
  •  1 serving (serving = 1 scoop) Nu-tek Pro5 Chocolate Protein Powder

Cake
1 ripe avocado
1 cup sweet potato puree
½ cup unsweetened applesauce
¼ cup date paste
1 tsp pure vanilla extract
2 eggs or egg replacer
½ cup spelt flour
½ cup cocoa powder+2 scoops chocolate protein powder
½ tsp sea salt
1 tsp baking soda
½ cup walnuts

Icing
¼ cup date paste (processed dates)
¼ cup hazelnut or almond butter
½ cup fat free plain Greek Yogurt
¼ cup cocoa powder
1 tbsp coconut oil, melted
3 scoops vanilla flavored Protein powder

1.Preheat your oven to 375F. Spray a 9” square baking pan with cooking spray and line pan with parchment paper, leaving enough extra to extend over the sides.

2.In the bowl of your food processor, combine avocado, sweet potato puree, unsweetened applesauce, date paste, vanilla and eggs and process until smooth and creamy.

3. In a large mixing bowl, mix together with a whisk the flour, cocoa powder, salt and baking soda. Add sweet potato mixture and mix with a rubber spatula until well combined.Fold in walnuts and transfer to your prepared pan.

4.Spread batter evenly and bake for approximately 25 minutes, or until a toothpick inserted in the center of the cake comes out almost clean.Set brownies on a wire rack to cool for 15-20 minutes.

5.While brownies are cooling, prepare the icing by adding all the ingredients to the bowl of your food processor and process until smooth and creamy.Pour over warm brownies and spread evenly with a spatula.

6.Leave the brownies on the wire rack until they reach room temperature then transfer to the fridge until completely cool. Cut into 12 squares and enjoy!!!!!
