Low Carb, Sweet and Spicy, Beanless Turkey & Chicken Chili

² Ingredients

  •  1 serving (serving = 1 cup) Swanson Unsalted Beef Cooking Stock
  •  1 serving (serving = 1 tbsp) Kroger Corn Starch
  •  1 serving (serving = 2 tbsp) Sweet Baby Ray's Hickory & Brown Sugar Barbecue Sauce
  •  1 tbsp Black Pepper
  •  1 tbsp Red or Cayenne Pepper
  •  1 pepper Jalapeno Peppers
  •  1 medium whole (2-3/5" dia) Tomatoes
  •  1 oz Mushrooms
  •  100 g Bacon
  •  100 g Ground Chicken
  •  100 g Ground Turkey
  •  1 medium (2-1/2" dia) Onions
  •  1 medium (approx 2-3/4" long, 2-1/2" dia) Green Peppers
  •  3 cloves Garlic
   

q Directions

Dice onions and caramelize in pan. Dice peppers and mushrooms and add to onions. Saute for 5 mins over med heat and combine mix into bowl. Let sit, the entire mixture will be added later.

Place bacon on a baking sheet and cook until crispy. When finished, crumble bacon and add to bowl of onions, peppers, and mushrooms. if you have one of those baking sheets that is perforated and rests on top of another, that is preferable as it will drain the bacon fat and give you a healthier chili.

Combine the ground chicken and ground turkey into pan. Saute until broken up and cooked through. A good amount of moisture will be left in the pan, do not drain this. One of the final steps is to combine ingredients in a pot (obviously) and you should add the entire mixture. The moisture here will act as a stock and add moisture.

Cut the jalapenos into thin rings. Place in bowl with caramelized onions, peppers, mushrooms
Take the 5 tomatoes and cut a small x, roughly the size of a dime into the skin right on the bottom. Place the tomato in hot water for 15 seconds, then remove and place in a bucket of ice water. The change in temperature will force the skin off, and you can then remove the seeds and dice the tomato.

Add tomatoes, beef stock, bowl of vegetables and bacon, ground chicken and turkey, and jalapenos to a pot over low heat. Add in BBQ Sauce, garlic, chili powder, pepper, cayenne pepper, and stir until thoroughly mixed.

Cook for 3 hours, stirring regularly. Add corn starch at the end to thicken.
