Light & Fluffy Crepes with a Fresh Fruit Topping
In a Bowl, Whisk:
1 Large Egg White
2 TB Unsweetened Vanilla Almond Milk
Â½ TB Coconut Flour
1 TB Oat Flour
1/8 teaspoon Vanilla Extract
Drop of Light Agave (or sweetener of choice)
Lightly coat a non-stick pan with Coconut Oil
Spoon half of the batter onto pan and spread into a thin layer.
Flip after 1 min and cook other side for about 30-45 seconds. Remove from Pan.
Stuff Crepes with Cottage Cheese.
Top with fresh chopped Strawberries.
Sweeten Cottage Cheese with Agave & Heat Berries to make a sauce.
