Blend almonds and cocoa powder for about 15 seconds. Do not over process. Add dates and vanilla and process until mixture begins to combine. Add SF syrup, one tablespoon at a time. Stop add SF syrup when the dough combines into a softball-sized mound.
Transfer dough to a bowl, cover with plastic wrap, and refrigerate for at least 2 hours. Roll into balls.
Option- dredge through coconut or sprinkles. Or both. Or neither.
Store in refrigerator. Yields 30. 30 calories per ball.
