³ Description

Not only is this dish simple, delicious, and low in calories, it is also a dish that people can't help but stare at!

² Ingredients

  •  2 oz, without shell, raw (yield after cooking) Shrimp
  •  1/2 avocado, NS as to Florida or California Avocados
  •  1/4 lemon yields Lemon Juice
  •  2 clove Garlic
  •  1 oz Portabella Mushrooms
  •  1/4 cup Parsley
  •  1 medium Zucchini
   

q Directions

1. With a julienne peeler, peel one zucchini to create zucchini strings (zoodles)
2. Microwave the zoodles for one minute and drain any water
3. Cook the shrimp and mushroom until done
4. In a food processor/blender, blend garlic, parsley, 1/2 an avocado, and 1/4 a lemon until smooth (If you prefer a thinner consistency, add olive oil)
5. Pour the citrus avocado sauce over zoodles, mushrooms, and shrimp
6. Toss and enjoy!

*Sauce will not microwave very well due to the avocado*
