Is there a better way to begin the week than with some fluffy pancakes?
Egg whites and stevia blended to stiff. Blend all remaining ingredients together in a separate bowl (except apple, 1tsp cinnamon, walnuts, syrup). Add the eggwhites and gently stir together. Let the batter stand for some minutes. Use coconut oil for cooking.
Topping: 1 apple, 1t cinnamon, 4 chopped walnuts, walden farm sugarfree pancake syrup, water
Dice the apples, put them in a pan on low heat. Add the other ingredients. Cook for 10 min until apples are soft and warm. Add more syrup or water as needed.
