Mmmmm, delicious! Served with a honey dijon dipping sauce.

q Directions

Makes 3 servings of 3 chicken tenders (9 total)

1. Season 9 tenders (or chicken breast strips) with salt and pepper.
2. Toast coconut in a pan on medium heat, stirring constantly until golden.
3. Have 3 separate bowls - one for flour, one for egg whites, and one for coconut.
4. Dip each tender first in flour, then in egg whites, and lastly in coconut.
5. Place on lined baking sheet, and bake at 400 for approx 10-12 mins.

Dipping sauce:
1. Combine yogurt, honey, and dijon. Mix well.
