³ Description

I'm not sure what I like most about these jack o lantern pies; the fact that they're vegan, mini, or take only about 10-15 minutes to make. That's right, these little cutie patootie pumpkin pies can be made in no time and make the perfect little treat for halloween!

² Ingredients

  •  1.5 cup, mashed Cooked Pumpkin
  •  1 tbsp Cinnamon
  •  2 tsp Vanilla Extract
  •  1 tablespoon Olive Oil
  •  1 tsp Baking Powder (Sodium Aluminum Sulfate, Double Acting)
  •  1 tbsp Maple Syrup
  •  2 serving (serving = 1 tsp) Madhava Coconut Sugar
  •  3 serving (serving = 1/4 cup) Gold Medal Whole Wheat Flour
   

q Directions

10 min Jack o lantern mini pumpkin pies - makes 2 minis

3/4 cup whole wheat flour (more as needed)
1/2 cup pumpkin purée
1 tbsp olive oil
1 tsp vanilla
1 tsp cinnamon
1 tsp sweetener of choice
1 tsp baking powder

Combine ingredients and mix well until a dough forms. Spray two small microwave safe bowls. Split dough into thirds. Press 1/3rd into one of the bowls and form a crust shape with it. Do the same with the other bowl. Set aside to prepare your filling:

1/2 cup pumpkin purée
1 tsp cinnamon
2 tsp liquid sweetener
1 tsp vanilla

Mix well and distribute evenly on top of your two crusts. Split your last third of your dough in half and flatter each out on a cutting board or plate. Press each out into a circle large enough to cover your mini pies. Cut desired shapes into the dough and press on top of your pie crusts. Sprinkle with a little coconut sugar. press a fork into the edges of your crusts then microwave 2-3 minutes. Let cool then enjoy
