³ Description

Delicious clean "hash browns" made with carrots and zucchini instead of potatoes. :) believe me, these will fit your macros.

² Ingredients

  •  2 large Egg
  •  4 large Egg White
  •  1 tbsp Black Pepper
  •  1 tbsp Basil
  •  16 oz Carrots
  •  6 oz Onions
  •  24 oz Zucchini
  •  4 tsp Minced Garlic
  •  2 serving (serving = 1 slice) Food For Life Baking Company Ezekiel 4:9 Low Sodium Sprouted Grain Bread
  •  4 serving (serving = 1/4 tsp) McCormick Garlic Salt
   

q Directions

1. Grate zucchini and ring out in a wash cloth to get all the water out
2. Toast Ezekiel bread and blend in a magic bullet or processor of some sort
3. Mix all the ingredients in a large bowl
4. You can either bake these at 400F for 20-25 min or pan fry them at Medium heat - I did both and they worked equally well
5. It gets a little tricky keeping the mixture together and forming pattys out of them, I kinda pretended like I was making a snowball and just plopped them on the cooking sheet lol once the egg cooks they stay together well
