Clean Leek Pie with a flax-seed and oatmeal crust. Light and delicious.
For the bottom/ crust: mix flax-seed meal, oats and 2 eggs in a food-processor until it becomes a non-sticky dough. Spread the dough onto the bottom of a cake baking form, and pre-bake on 200 C for 10 minutes.
Meanwhile wash and chop the leeks and cook them in 100 ml water till softened. Season to taste with pepper, cayenne pepper, cumin and curry.
In a bowl mix 2 eggs, 150 g low fat Quark (or Chobani Greek Yogurt), 100 g Low fat Cottage Cheese and approx. 3 tsp. fresh chopped basil. Add the mixture to the cooked leeks.
Take the baked bottom/ crust out of the oven, spoon the cooked leeks on top of it and bake the whole pie for another 40-45 minutes at 200 C until it gets lightly brown on top.
Serve with a light salad.
