³ Description

After a long but fun day today, I was ready to eat dinner but found out I was low on groceries :( I only had 1 piece of tilapia, some pre cut veggies, and some left over homemade mayo, with some other condiments and half a sweet potato lol. So, I whipped this up and it wasn’t half bad, it was actually yummy. Luckily my grocery store is open until midnight, so I will be doing some late night grocery shopping since I have an early work day tomorrow ;)

² Ingredients

  •  1/4 tsp Cumin
  •  1/2 tsp Garlic Powder
  •  1 dash Black Pepper
  •  1/4 cup Asparagus
  •  1/4 cup pieces Mushrooms
  •  1 lb Tilapia (Fish)
  •  2 tablespoon Fat Free Mayonnaise
  •  1/4 cup, chopped Bell Peppers
  •  1 dash Sea Salt
  •  1/2 serving (serving = 1 tbsp) Nutiva Organic Extra Virgin Coconut Oil
  •  4.5 serving (serving = 1 tsp) Coconut Secret Raw Coconut Aminos
   

q Directions

Pre-heat oven to 400°F.

Combine mayo, garlic powder, cumin, salt and pepper in a small plate and season tilapia. Place tilapia in a sealed air tight container and let it marinate for 15 minutes in the refrigerator.

Place marinated tilapia on a baking sheet lined with parchment paper and place it in the oven. Let it bake for about 12-15 minutes until tender.

Meanwhile, place a skillet over medium high heat and add 1.5 tsp coconut oil. Place veggies in the skillet and season with coconut aminos. Let veggies cook for 1 minute.

Take tilapia out of the oven when ready and serve with pan seared veggies.

Enjoy!

NOTE: This can be made Paleo by using paleo mayo, or omitting it entirely.
