Mix the cocoa powder and cassava(tapioca) flour together.
Make a well in the middle of the dry ingredients, pour in the milk, vanilla and the egg and slowly mix to form a batter, (You're aiming for a fairly liquid batter- if it is too thick add some more milk).
Pour some batter on a hot WELL GREASED frying pan and smooth out with the back of your spoon to form a large flat pancake. Leave to bubble up before flipping over.
Stuff your pancake with whatever you desire, I used Peanut butter, and banana in one and light cream cheese, berries and bananas in the other. Drizzle with honey.
