Easy, soft, healthy cookies.

² Ingredients

  •  1 large (8" to 8-7/8" long) Banana
  •  2 serving (serving = 1/2 cup dry) Quaker Old Fashioned Oats
  •  1 medium Egg
  •  1 serving (serving = 1 tbsp) Spectrum Chia Seeds
  •  3/4 serving (serving = 1 cup) Silk Pure Almond Milk - Original
  •  1/2 serving (serving = 1 tbsp) Spectrum Organic Virgin Coconut Oil
  •  3/4 cup, chopped Walnuts
  •  1 serving (serving = 1 serving (36 g)) Raisins
   

q Directions

Mash large banana, add 1 whole egg,1/4 cup of almond milk, 1tsp of baking powder, 1 tsp of melted coconut oil, 1/8 cup of baking stevia( or honey), 1 tbsp of chia seeds,1/4 cup chopped walnuts,1/3 cup of raisins and mix everything together. Now add 1 cup of old-fashioned oats and mix. You will see the batter will be runny and thas okay. Do NOT add any more oats unless you want dry chewy cookies. Leave the batter on the counter for 10-15 min the most and let the oats expand and chia seeds will bind creating the right texture. 15 min later spoon 6-8 cookies on the parchment paper. The batter will still be just a tad bit runny and its okay. The cookies wi shape perfectly. Bake at 350F for 10 minutes and then broil the top at High for 2 min. Done.
