Delicious and nutritious, crispy low carb, cauliflower crust pizza

² Ingredients

  •  2 cup Cooked Cauliflower
  •  1.5 cup, shredded Nonfat or Fat Free Mozzarella Cheese
  •  1 serving (serving = 1 egg) Fresh & Easy Organic Medium Brown Eggs
  •  1 serving (serving = 3 tbsp) Crystal Farms All Whites 100% Liquid Egg Whites
  •  1 tbsp Parsley
  •  1 tsp Onion Powder
  •  1 tsp Garlic Powder
  •  1.3 serving (serving = 3 cups) Trader Joe's Wild Arugula
  •  1 serving (serving = 5 oz) Nature Sweet Cherub Tomatoes
  •  1 cup chopped Broccoli
  •  2 serving (serving = 4 olives) Mezzetta Kalamata Olives
  •  1 serving (serving = 1 portion) Jason's Deli Yellow Bell Pepper Ring
  •  2 serving (serving = 2 tbsp) Hunt's Tomato Paste
  •  1 tsp, leaves Oregano
   

q Directions

Boil the cauliflower for 8-10 minutes until soft and shred it to "make it riced".
Remove excess moisture with cheese cloth or strainer. Add 2 eggs or 1 egg and 2 egg whites, shredded cheese and spices:parsley, onion and garlic powder, oregano and ground black pepper.

After all is well mixed, pad it down over an olive oil sprayed pizza pan or cookie sheet and in pre-heated oven at 450 deg for about 15-20 min or until it starts to brown. Add tomato paste, sprinkle arugula, chopped bell peppers, olives, broccoli and oregano.

Return to oven under broiler on high for 3-4 minutes. May sprinkle any leftover cheese and oregano for added taste and remove when fully melted.
