³ Description

Grilled Chicken stuffed with tomatoes, sun-dried tomato and basil hummus, and onions served over gluten-free brown-rice pasta mixed in a cheese-less Alfredo sauce.

² Ingredients

  •  0.3 serving (serving = 1 cup) Fage Total 0% Greek Yogurt
  •  1 tsp Garlic Powder
  •  5 dash Black Pepper
  •  1 tbsp chopped Onions
  •  1 serving (serving = 4 oz) Publix Boneless Skinless Chicken Breast
  •  1 serving (serving = 2 tbsp) Grandessa Sundried Tomato & Basil Hummus
  •  1.5 serving (serving = 2 oz dry) Tinkyada Brown Rice Pasta Penne
  •  1/2 serving (serving = 1/2 cup) Del Monte Petite Cut Diced Tomatoes
   

q Directions

For Chicken = Wash and trim and then cut a slit into the side of the breast to stuff. Mix together 1tbsp hummus, 1 tbsp tomatoes, and the onion together in bowl. Put this into the slit to stuff chicken. Use a skewer to sew up the chicken breast and them grill evenly on both sides until cooked through (about 5 minutes on each side or less).

For Pasta and Sauce = Boil water and cook pasta according to package directions. Once cooked, drain all water and then mix remaining tomatoes, hummus, garlic powder, pepper, and greek yogurt with the pasta.

Place cooked chicken on top of pasta and top with celery tops.
