My guilt-free hollandaise is lower in fat than a traditional, which can contain up to 15g of fat and 130 calories! Try my recipe for only 31 calories and 1g fat! If you're an Eggs Benedict lover, you'll have to try it out! I also lightened the meal by making an Eggs Florentine, which replaces the ham with spinach.

q Directions

Whisk together greek yogurt and almond milk.

Add half of greek yogurt mixture to a pot with cornstarch, dijon, worcestershire, salt and cayenne. Whisk until creamy and smooth. Add remaining yogurt mixture and the lightly beaten egg and combine well.

Turn heat to medium low and whisk continuously (if you do not continue to whisk you will end up with a lumpy hollandaise– YUCK!). Continue to whisk until sauce comes to a light simmer.

Remove from heat and continue to whisk for 15 seconds. Add melted butter and lemon juice, whisking well to combine.

Serve warm on Eggs Benedict or Florentine!
