It's amazing the many delicious and healthy recipes you can create with sweet potatoes!
1. Cube and boil sweet potato for 10 minutes
2. Preheat waffle iron and grease with coconut spray or oil if it's not non-stick.
3. Mix all ingredients. I used a hand mixer and a bowl because i'm old school sometimes but you can use a food processor. Using a blender could work too but the batter is rather thick and would create a sticky mess, so i prefer to use a bowl and spread the batter in the waffle iron using a wooden spoon
