  •  2 tablespoon Coconut Oil
  •  2 large Egg White
  •  0 dash Salt
  •  1/4 cup Yellow Sweet Corn (Kernels Cut Off Cob, Frozen)
  •  1/2 tsp Baking Powder (Sodium Aluminum Sulfate, Double Acting)
  •  2 serving (serving = 1/4 cup dry) Bob's Red Mill Corn Grits Polenta
  •  1/2 serving (serving = 1 cup) Blue Diamond Almond Breeze Unsweetened Vanilla Milk
  •  2 serving (serving = 1 tbsp) Earth Balance Organic Buttery Spread - Original Whipped
  •  2 serving (serving = 1/4 cup) Bob's Red Mill 100% Stone Ground Whole Wheat Pastry Flour
   

q Directions

preheat oven to 425°
sift together dry ingredients into a bowl.
add egg, milk, butter, corn, and oil.
beat until smooth; do not overbeat.
spray your pan with no-stick cooking spray (or add some melted buttery spread to the bottom of the pan and pour your batter into it for those buttery, crackalicious, crispy edges!!! thanks mom :)
bake for 20-23 minutes
