Great little treat for after dinner - or anytime!
2 cups almond flour
Â¾ teaspoon baking powder
1 full dropper of liquid vanilla stevia
Â¼ teaspoon vanilla extract
1 teaspoon lemon juice
pinch of salt
3 tbsp coconut butter
1/4 tsp vanilla extract
4 drops vanilla stevia
ï”¹Preheat oven to 350 degrees and line a baking sheet with parchment paper or grease well with coconut oil.
ï”¹In a large bowl add almond flour and baking powder and pinch of salt.
ï”¹In a small bowl mix 1 egg, stevia or honey, lemon juice, and vanilla extract and whisk until combined.
ï”¹Pour wet into dry and mix until thoroughly combined and you have a thick dough.
ï”¹Flatten dough out onto parchment lined baking sheet and shape into a rectangle shape about 7-8 inches long and 4 inches wide.
ï”¹Cut into 3 pieces width wise, then cut in half length wise so you have 6 squares. Then, cut each square on a diagonal.
ï”¹Place scones in oven for 10-15 minutes until very slightly golden brown.
ï”¹Once scones are done pull them out and let them cool slightly for about 10 minutes.
ï”¹Melt coconut butter, and add in vanilla extract and vanilla stevia.
ï”¹Evenly distribute coconut butter icing on top of the cooling scones.
