Stuff & Bake your Apple!!
Pre-Heat oven at 400 degrees.
Cut off the top of an apple.
Gut the apple - I used a knife to cut around the inside, about 1cm from the skin. Then scooped the apple out & removed the seeds.
Chop the scooped out apple and put into a small bowl.
1/2 TB LowFat Cottage Cheese
1/2 TB Almond Butter (I used crunchy)
Place filling back into apple (it will overflow a bit!)
Bake for about 20 minutes. Apple will be soft, yet still fairly firm.
For a softer apple, bake another 5-10 min.
Sub with ANY Nut butter! & Top with fresh Berries!
